Pumpkin Week Staples from Scratch: Pumpkin Pie Pop-Tarts with Maple Glaze

I love these so much. The first time I made them was for my son’s seventh birthday. We hosted a Harry Potter-themed dinner and these pop-tarts stood in for pumpkin pasties. That was back before I had an actual Harry Potter cookbook.

My parents fully embraced the Harry Potter theme.

To make these pop-tarts, I followed this recipe from Joy the Baker. I used the rectangular containers in our Laptop Lunch boxes to make neat little rectangles out of the dough. You could use any little square or rectangular containers as cookie cutters. I find that to be easier than trying to cut the dough by hand.

I have to confess that I’m not sure I’ve ever actually eaten a Pop-Tart. So, I can’t really say whether or not these are close to the store-bought version. But who cares–they’re delicious. I love the buttery crust and pumpkin pie filling. I think these will become a once-a-year tradition for me. I’ve made them each fall for the past three years. This year, we only ate a couple and I tucked the rest away in the freezer to enjoy on Thanksgiving.

Would I make this again? I’ll pencil them in for next October.
